Moringa Paratha With Lauki Raita Servings - 3 - 4 INGREDIENTS Wheat flour - 250 grams Drumsticks leaves - 10 grams Coriander - 2 teaspoons Green chili - 1/2 teaspoon Salt - 1 teaspoon Red chili - 1 teaspoon Turmeric - 1/4 teaspoon Garam masala - 1/4 teaspoon Cumin powder - 1/4 teaspoon Carom seeds - 1/4 teaspoon Ghee - 30 milliliters Water - 100 milliliters Ghee - for brushing Water - 100 milliliters Grated bottle gourd - 150 grams Yogurt - 250 grams Salt - 1/2 teaspoon Black pepper - 1/4 teaspoon Cumin powder - 1/2 teaspoon Green chili - 1/2 teaspoon Coriander - 2 teaspoons Mint - 1 tablespoon Red chili - for garnishing PREPARATION 1. In a mixing bowl, add 250 grams wheat flour, 10 grams drumstick leaves, 2 teaspoons coriander, 1/2 teaspoon green chili, 1 teaspoon salt, 1 teaspoon red chili, 1/4 teaspoon turmeric, 1/4 teaspoon garam masala, 1/4 teaspoon cumin powder, 1/4 teaspoon carom seeds, 30 milliliters ghee and mix it well. 2. Add 100 milliliters water and knead it into a smooth soft dough. 3. Rest the dough for 20 minutes. 4. Take a ball from dough and dust it with flour. 5. Flatten it with the help of a rolling pin. 6. Place it on a hot tawa and cook on moderate heat for 2 - 3 minutes. 7. Then, flip it gently. 8. Brush it with ghee and flip it again. 9. Brush the other side too. 10. Cook until it turns golden brown in color from both sides. 11. Remove it from heat and keep aside. 12. Take a pan, add 100 milliliters water, 150 grams grated bottle gourd and mix it well. 13. Cook for 8 - 10 minutes on medium heat or until the water gets disappeared. 14. In a bowl, add 250 grams yogurt, boiled bottle gourd, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon cumin powder, 1/2 teaspoon green chili, 2 teaspoons coriander, 1 tablespoon mint and mix it well. 15. Refrigerate for 30 minutes. 16. Sprinkle some red chili on it. 17. Serve with prepared paratha.
